About Peñas Blancas ‎

Peñas Blancas is a coffee farm located in Acevedo, Huila, Colombia, at elevations ranging from 1,600 to 1,900 meters above sea level. The project works with varieties such as Java, Geisha, Caturra, and Castillo, utilizing both washed and natural processing methods while collaborating with smallholder farmers throughout the region. ‎

More than just a coffee farm, Peñas Blancas is a social initiative created to improve working conditions and support the development of local coffee producers. Through access to modern infrastructure, technical training, and centralized quality control, farmers are able to achieve higher specialty coffee standards and gain more stable market access. ‎

The project is led by Nestor Lasso and Jhon Vergara, two renowned coffee professionals from Huila known for their expertise in experimental processing methods, post-harvest innovation, and farmer education. Under their leadership, Peñas Blancas has become an important hub for specialty coffee development, transparent collaboration, and community support in the Acevedo region. ‎

Processing ‎

‎
Castillo is a Colombian coffee variety recognized for its disease resistance, consistent productivity, and clean cup profile. The high-altitude conditions of Peñas Blancas help highlight the variety’s balanced sweetness, clarity, and structure, making it well suited for both espresso and filter roasting. ‎
‎
For this lot, only fully ripe coffee cherries are hand-selected. The cherries are then dried using the natural process on raised beds for 25–30 days under carefully controlled conditions. Throughout the drying period, temperature and humidity are closely monitored, and the cherries are regularly turned to ensure even moisture loss and controlled fermentation. ‎

The result is a sweet and clean cup with balanced fruit character and the vibrant acidity that has become a hallmark of coffees from the Huila region. ‎
