Step 01 ‎

Cherries are hand-picked at full ripeness. ‎

Step 02 ‎

The cherries undergo an anaerobic process for 72 hours, promoting the development of floral aromas and controlled acidity. ‎

Step 03 ‎

After fermentation, the cherries are depulped and left for 48 hours with a full layer of mucilage in tanks with controlled air exposure to continue fermentation. ‎

Step 04 ‎

The tanks are then hermetically sealed again for 48 hours to extend enzymatic fermentation and the breakdown of pectins. ‎
This enhances sweetness, body, and flavor complexity. ‎

Step 05 ‎

Selected cherries undergo a thermal shock: alternating hot and cold water to lock in aromas and complete the fermentation process. ‎

Step 06 ‎

Drying takes place on shaded, raised patios for 20–25 days. ‎

Step 07 ‎

Stabilization in GrainPro bags lasts 12–15 days prior to hulling. ‎
