This Guatemalan coffee comes from the Doña Linda farm in the Nuevo Oriente region and is classified as Strictly Hard Bean (SHB) because it is grown at an altitude of over 1,200 meters above sea level. It is a Catuai variety, known for its excellent cup quality, with sweet, balanced notes and a full body. The coffee plantations grow on volcanic soils rich in minerals, which, together with the humid and cool climate of eastern Guatemala, create ideal conditions for the development of the bean. The cultivation is carried out mainly on small farms under shade, which helps preserve biodiversity and improve the quality of the coffee. The harvest is carried out by hand from December to March, with a careful selection of only the ripest cherries. After harvesting, the coffee undergoes the traditional washed process and is then dried in the sun - on patios or African beds, which ensures a clean and bright cup. The Nuevo Oriente region, located in eastern Guatemala, is characterized by volcanic soils, high humidity, and moderate temperatures. These conditions contribute to the formation of a unique flavor profile dominated by notes of chocolate, sweet fruits, and balanced citrus acidity. ‎
