Indonesia — Gayo Highlands, Terry Farm Project
This coffee comes from Terry Farm, a farmer partnership program curated by PT. Jingki Roda Gayo. Located in the Gayo Highlands (Bener Meriah, Aceh, Indonesia) at an altitude of 1,300–1,600 meters above sea level, the plantations thrive in fertile volcanic soils and a cool tropical climate, ideal for growing high-quality Arabica coffee.
The coffee trees are shade-grown, the cherries are handpicked, and the farmers follow eco-friendly practices, including the use of organic compost made from coffee pulp. In the Gayo Highlands, women — especially the wives of farmers — play a vital role throughout the production chain, from harvesting ripe cherries to meticulously sorting green beans. Their attention to detail ensures exceptional quality and gives Gayo Arabica its distinct, refined profile.
After harvesting, fresh cherries are immediately processed. The first step is floatation sorting (rimbang) — a traditional yet effective method in which ripe red cherries are submerged in water to separate them from unripe or defective ones. This guarantees that only dense, perfectly ripe cherries move forward in processing. All post-harvest stages are conducted under controlled conditions to preserve freshness, stable moisture, and consistent quality.
The Gayo region is recognized worldwide as one of the best terroirs for Arabica coffee cultivation. Coffee production here dates back to the early 20th century when, around 1908, Dutch colonial authorities introduced Arabica seedlings to the area. Today, Gayo coffee is primarily grown in the districts of Central Aceh, Bener Meriah, and Gayo Lues.
The combination of volcanic soil, hilly terrain, cool temperatures, and abundant rainfall creates the perfect environment for cultivating coffee of outstanding quality.
To improve yield and consistency, local farmers collaborate through the PT. Jingki Roda Gayo partnership (Terry Farm Project), managing small plots of land ranging from 0.5 to 2 hectares.
Today, the Gayo Highlands stand as a symbol of tradition, community, and sustainability in Indonesia’s coffee industry — where every cup tells a story of harmony between people and nature.
