🌿 About the Farm
Café Rivense del Chirripó is a family-owned micro mill located in the highland microregion of Chirripó, in the southern part of Costa Rica. Established in 2005 by Régulo Ureña and Isabel Rojas, the farm has become a benchmark for sustainable specialty coffee production in the country.
The farm follows strong sustainability principles:
shade-grown coffee to enrich soil and maintain cooler temperatures,
fertilization based on annual soil analysis,
minimal herbicide use — applied only in limited areas with aggressive weeds,
all water sources are protected, and fruit trees are planted throughout to support local biodiversity.
☀️ Processing
Cherries are handpicked at peak ripeness and processed using a fully dry honey method:
no water is used for transport or depulping,
mucilage remains intact, helping preserve sweetness and clarity,
drying takes place on raised African beds under the sun and in static mechanical dryers,
after drying, the coffee is sorted, packed, and exported directly from the farm, ensuring full traceability.
🌄 About the Region
The Chirripó microregion is gaining recognition as one of Costa Rica’s most promising specialty coffee origins. Located between the Cerro de la Muerte (3491 m) and Cerro Chirripó (3820 m) — the country’s highest peak — this area benefits from a unique microclimate with cool temperatures and rich volcanic soils.
These conditions create ideal environments for growing high-quality coffee, which has led to:
increasing coffee cultivation at high elevations,
introduction of new varieties,
a rise in award-winning micro-lots from this region.
