Mauricio Escalon was born into a family of coffee growers that began their coffee history in the third quarter of the 1800s. In the 1870s, his great-grandfather, Pedro José Escalon, began cultivating a plantation in Santa Ana. He later founded El Molino (The Mill), the first industrial coffee processing plant in El Salvador. At the end of the 20th century, the family business was going through difficult times due to a price crisis. However, with Mauricio’s involvement, it received a second wind. In 2003, Cafescal was created with the strategy of following the specialty philosophy. The company name stands for “Cafes Escalon Calderon”, where Calderon is Mauricio’s mother’s surname. The family business now has 10 farms and 2 processing stations. Mauricio is the Managing Director of the export company Cafescal specialty Coffee. He is responsible for the administration and management of the agricultural processes. The passion for coffee played a key role in his life, as despite his degree in architecture and experience in public works, Mauricio returned to the family business. ‎

In the late 1800s, Holanda, along with San Antonio and San Gabriel, were part of a farm called San Antonio. This was the farm where Escalon Heritage began. It is said that this was the first coffee export to the United States in the late 1880s. Holanda currently covers 8 hectares, where Bourbon, Pacas and Colombia coffee varieties are cultivated, grown in the shade of the Ingas. The San Jose Estate farm is located in the Ilamatepeq mountain range, in the canton of El Jocoton Arriba, near Lake Caotepeque. Its clay soils give a special quality to the coffee. This farm is home to the Cafescal - Beneficio San Jose processing plant. On an area of 13 hectares in the shade of orange trees, the varieties Borbon, Pacas, Parainema, Marsellesa and Yellow Icatu are grown. The Las Marias farm has been owned by the Escalón family since the early 1900s. Later, it was divided between two descendants. One of them sold his share to another company in the 1990s. And just a few years ago, Mauricio bought it back and returned it to the family. Now, on an area of 35.7 hectares, in the shade of ingas and gravileos trees, Bourbon, Pacas, Colombia, and Pacamara are grown. In 2021, Pacamara from Las Marias was among the winning lots of the Cup of Excellence. As a social responsibility, Cafescal promotes the “happy people” program, which is based on happiness from what you do. They encourage the team to find happiness in their daily work. ‎
